New Year, New Recipes

I have so many recipes to try! Recipes from pinterest and blogs, recipes I have torn out of magazines, and recipes from new cookbooks. Davis and I made a pact to try a bunch of new recipes in 2012. He will get to try new things, and it will also help us weed out the bad ones! 

The first one we tried is one I found on pinterest. It was super easy, and Davis said he would eat it again so we are off to a great start!

Baked Chicken Fajitas
- 1 lb. boneless, skinless chicken breasts, cut into strips
- 1 (15 oz.) can diced tomatoes
- 1 (4 oz.) can diced green chilies
- 1 medium onion, sliced
- 1 large bell pepper, seeded and sliced
- 2 Tablespoons vegetable oil
- 2 teaspoons chili powder
- 2 teaspoons cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 12 flour tortillas, warmed to serve

Preheat oven to 400 degrees. Grease a 13x9 baking dish. Mix together chicken, tomatoes, chilies, peppers, and onions in the dish.

In a small bowl combine the oil and spices. Drizzle the spice mixture over the chicken and toss to coat.

Bake uncovered for 20-25 minutes or until chicken is cooked through and the veggies are tender. I cooked everything for 25 minutes, removed the chicken, and continued cooking the vegetables for about 20 minutes more. I then added the chicken back in for about 3-5 minutes until it was warmed back up. Serve with warmed tortillas and enjoy!
