Avalanche Bars

I can't believe that I am actually writing two blog posts this week! I have been a little off the blogging, but hopefully, I will get back into the swing of it!

Anyways, I thought I would share the recipe for the Avalanche Bars that I took to Girls' Weekend. I found them on Pinterest. They are super easy and loved by everyone who tastes them! Davis even requested that they be a staple in our pantry. I don't think so! We would probably eat a batch a night!

Avalanche Bars
- 12 oz. bag of white chocolate chips
- 1/4 cup creamy peanut butter
- 3 cups Rice Krispies
- 1 1/2 cups mini marshmallows
- 1/4 cup mini chocolate chips + 2 Tbsp. for garnish

Lightly grease a 9 x 9 inch pan. In a microwave-safe bowl, melt white chocolate chips on medium power for 1 minute. Stir and continue in 30 second increments until the chips are melted. Combine the peanut butter and melted white chocolate chips. Add the Rice Krispies.  Let cool approximately 15 - 20 minutes, stirring every 5 minutes of so to help cool. Add the marshmallows and mini chocolate chips and stir to combine. Pour mixture into the prepared pan and spread evenly, pressing lightly with the back of your spoon. Press the remaining chocolate chips into the top for garnish. When the bars are completely cooled, cut them into squares.
