Remember the when I posted about the Marinated Turkey a few days ago? Well, I some leftovers and couldn't bare to throw them away since I thought the turkey turned out so good! I found a recipe for Turkey Chili over on the bakin' and eggs blog and decided to give it a try. It was the perfect time to try it since Davis was out of town, and anything other than regular beef chili is just weird to him! I added a few extra ingredients to mine, and I thought it turned out really good!
Turkey Chili
- 1 large white onion, diced
- 1 bell pepper (any color), diced
- 3 tablespoons olive oil
- 1 tablespoon chili powder
- 1 tablespoon Tiger Sauce (the original recipe called for a teaspoon on chipotle chili powder, and I didn't have that so, I add this instead to give it a little extra hotness)
- 2 teaspoons packed brown sugar
- 1 (28 ounce) can whole tomatoes in juice or diced tomatoes
- 1 (19 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can pinto beans, rinsed and drained (this is something I added on my own because black beans don't come in a 19 ounce can, so I just added an extra can of beans)
- 1 cup frozen corn (this is something else I chose to add)
- 1 cup water (the original recipe called for 1/2 cup water, but since I added extra veggies, I added some extra water too)
- 1 teaspoon salt
- 2 cups shredded/chopped cooked turkey
Heat a large pot over medium heat. Add olive oil and heat until simmering. Add onions and peppers and cook, stirring frequently, for about 10 minutes, until golden. Add spices and brown sugar, and cook until fragrant, about 1 minute. If you are using whole tomatoes, cut with kitchen scissors before adding to the pot (I just used diced tomatoes). Add tomatoes, beans, corn, water, salt, and simmer about 15 minutes. Stir in turkey and cook for an additional 5 minutes, or until heated through.
I think Im going to tell my mom to cook this when we come home next week.
