Salmon Supper

Last night I cooked, one of Davis's favorite meals that I make. Davis is an extremely picky eater, so I am shocked that he always says this is so good! Thought I would share this yummy recipe from My Recipes (Southern Living, Cooking Light, etc. house their recipes here) and one of the sides that I put with it.

Broiled Salmon with Marmalade-Dijon Glaze (4 servings)
-1/2 cup orange marmalade
-1 tablespoon Dijon mustard
-1/2 teaspoon garlic powder
-1/2 teaspoon salt
-1/4 teaspoon black pepper
-1/8 teaspoon ginger
-4 salmon filets

Preheat broiler. Combine first 6 ingredients in a small bowl, stirring well. Place fish on a jelly roll plan coated with cooking spray. Brush half of marmalade mixture over fish; broil for 6 minutes. Brush fish with remaining marmalade mixture; broil for 2 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness.

Balsamic-Roasted New Potatoes (6 servings)
-2 teaspoons olive oil
-2 teaspoons minced garlic
-1 teaspoon chopped fresh thyme (or a 1/4 dried thyme)
-1/2 teaspoon kosher salt
-1/4 teaspoon black pepper
-2 pounds small new potatoes, quartered
-3 tablespoons balsamic vinegar, divided

Stir together first 5 ingredients in a large bowl or zip-lock bag; add potatoes.  Drizzle with 2 Tbsp. balsamic vinegar, and stir or shake well to coat. Arrange on a pan coated with cooking spray. Bake, uncovered, at 450 degrees for 45 minutes or until potatoes are tender, stirring once. Drizzle with remaining 1 Tbsp. of balsamic vinegar, and toss well. Serve immediately.

I served the salmon and potatoes with a salad for something green. I think this turned out to be a very balanced meal!
