Here is my menu for Bunko. Thought y'all might like some recipes!
Appetizers:
Strawberry-With-Cream Dip
-1 (8oz) cream cheese, softened
-1 cup strawberry low-fat yogurt
-2-3 tablespoons honey (to taste)
-1/2 cup chopped strawberries
-1 (8 oz) carton Lite Cool Whip
-1 quart fresh strawberries, divided (May need more-Get with stems if possible
Combine cream cheese, yogurt, and honey in small bowl. (Combine a small amount first, and then the remainder, to prevent lumps of cream cheese). Beat at medium speed with hand mixer just to blend; fold in Lite Cool Whip and chopped strawberries just enough to mix. Serve as dip with fresh strawberries. This can be used as a dip with other fresh fruits such as apples, peaches, or banana chunks that have been marinated in pineapple juice. Note: You may omit cream cheese for a lighter dip.
Cheese Wafers
-8 oz of extra sharp cheese grated
-1 stick of butter
-1 cup flour - plain
-1 cup of chopped nuts
-1/2 tsp salt
-1/2 tsp paprika
-1/4 tsp Tobasco
Grate cheese and cut the butter up in it and let it sit for awhile before starting to mix .
Mix all with fork. Pinch off dough and roll marble size. Put on a cookie sheet and press with fork.
Bake at 250 deg for 50 minutes.
Dinner:
Raspberry Walnut Salad
-Spinach
-Walnuts
-Grapes
-Feta Cheese
-Raspberry Walnut Dressing
White Rice
I have discovered rice in a bag. It has changed rice cooking forever. No more sticky rice or sticking the the bottom! I highly recommend!
Chicken Divan (Since Davis won't eat many casseroles, I find any excuse to fix this!)
-2 small chicken breasts—cooked and chipped
-1 pkg. frozen broccoli spears
-1 can cream of chicken soup
-½ cup Miracle Whip or mayonnaise (or can use some of each to make ½ cup)
-½ tsp. lemon juice
-1/8 tsp. curry powder
-½ cup grated cheese (I use more)
-Crushed Ritz crackers
Cook broccoli. Drain. Lay broccoli in bottom of casserole, top with chicken. Combine soup, mayo, lemon juice, and curry powder. Pour over chicken. Top with cheese and Ritz*. Bake 30 minutes at 350 degrees.
*Melt ¼ stick of butter or margarine and then mix with crushed Ritz. Add to top of casserole.
Dessert:
I always try to be Betty Crocker with desserts, but I always fail at desserts. It was worth the money to get the local bakery, called the Cakery, to do some festive cookies for the occasion.
